Our Barolo Classico is our wine that truly showcases the area of Barolo. It is produced as a combination of five of the most prestigious vineyards of the Barolo area: Cannubi, Cannubi San Lorenzo, Fossati, Liste and San Pietro delle Viole. This wine fully reflects the elegance and the power of a traditional wine from the village of Barolo.

The 2016 vintage in Piemonte was an exceptional one for Nebbiolo across the Langhe, especially in Barolo. The vintage started with a relatively mild winter and a cool, dry spring, allowing for very abundant flowering. Summer was warm, but without the heat spikes of the 2015 vintage, giving the vineyards the ability to ripen evenly. These conditions, moderate temperatures and only sporadic, refreshing rains, led to a very long and relatively stress-free growing season. The Nebbiolo harvest across our Barolo vineyards was well-paced and at the optimal times, creating a perfect harmony of flavors that is fresh, yet structured, with great potential for additional development with aging.

Producing this wine starts with spontaneous fermentation carried out by indigenous yeasts for about 12 days in concrete tanks with controlled temperature (22 – 25 C initially, 29-30 at the end), followed by submerged cup maceration for 30 days. After racking the malolactic fermentation starts, and it lasts about 15 days at 22 C. The wine is then aged for 4 years in Slavonian oak casks (4500L) with a further refining in bottle for 6 months. This is the classic, traditional “formula” used by the ancient Barolo families to produce a wine that embraces and melds each of the peculiar characters of the different vineyards and terroirs of the Barolo area.
