This Metodo Classico cuvée is comprised of a blend of 70% Pinot Noir and 30% Chardonnay, harvested in early September 2010. For the "Cuvée Novecento", grapes are sourced from the village of Loazzolo with an average vine age of 30 years. As with all of our cuvées, we follow a very similar process to maintain the highest level of quality in the vineyard and cellar. In the vineyard, we green harvest to select only the grapes that can contribute the highest acidity and freshness to the blend. Once in the cellar, each parcel is vinified separately, then blended after primary fermentation. Assemblage after primary allows our cellar master to create a wine that highlights the true expression of the individual lots to be bottled for secondary fermentation. This cuvée was aged on the lees in bottle for seven years before disgorgement and, like the Blanc de Blancs, no dosage was added to the blend.
