We also produce a very limited amount of Sekt (“sparkling wine”). For our Grünhaus Sekt, we make the wine in the traditional methode champenoise where the wine's primary fermentation takes place in old fuder casks and is then left on lees for about eight months to achieve the body and richness that we seek from the wine. Then the wine is racked and filtered, to be matured in the bottle. We use our own top quality Spätlese wine from our Grosse Lage site Herrenberg for the dosage, creating a bright but silky brut-style sparkling wine featuring a fine mousse and our signature Grünhaus racy minerality.
